We’ve rounded up some of our favorite mocktails that are perfect for sipping during a round of golf on one of our Nicklaus-designed courses, enjoying dinner with friends or toasting another unforgettable Arizona sunset.

First on our list is a shrub. No need to call the landscaper, a shrub is a concentrated syrup featuring three core ingredients: fresh fruit, sugar and vinegar. Sometimes called drinking vinegar, shrubs are sweet and tangy and typically served with club soda.

The recommended ratio for a good shrub is easy to remember, 1:1:1 with equal parts fruit, sugar and vinegar. Apple cider vinegar is popular for its bright acidity, but experiment with champagne or red wine vinegars and including a splash of balsamic varietals to add depth of flavor. Standard white vinegars should be avoided as they bring too harsh a flavor to the party. There are two ways to make a shrub. The hot method includes simmering the ingredients together like you would for a standard simple syrup. The cold method is a longer process, leaving the sugar and vinegar to macerate the fruit over the span of several days to create the shrub’s syrup-like consistency. In both methods, strain the syrup before use to remove the remaining fruit…which can be repurposed as a great topping for yogurt or ice cream

Pro tip: Add herbs and spices for an extra kick. A few of our favorite pairings include: strawberry, basil and black pepper, white peach with ginger and grapefruit and rosemary.

A classic mocktail choice is the Nojito. As the name would imply, this bright and refreshing mocktail is an alcohol-free take on the beloved mojito. Fresh mint leaves are gently muddled with lime and simple syrup, served over ice and topped with club soda.

A simple but underrated option is a bitters and soda. The botanical notes found in bitters add layers of flavor that elevate an ordinary sparkling water into something far more interesting. Because bitters are commonly associated with craft cocktails, this drink carries a familiar cocktail-bar feel while remaining

light and refreshing. It’s an ideal option for those who enjoy nuanced flavors without the sweetness found in many mocktails but is more interesting than a simple club soda with lime.

When you’re craving something with the spirit of a margarita, a hot honey mango mocktail delivers vibrant tropical flavor and just the right amount of heat. Fresh diced mango—or a high-quality mango purée for convenience—is muddled with hot honey and a squeeze of fresh lime juice to balance the sweetness. Shaken with ice and served in a margarita glass, it feels every bit as celebratory as its spirited counterpart. For an extra layer of flavor, rim the glass with Tajín.

Another option for the non-carbonated crowd, the pear sage mocktail offers a refined balance between delicate fruit, bright citrus and earthy herbaceousness. Combine 2 ounces pear juice, the juice of half a small lemon, 4 ounces lemonade and 4 sage leaves in a cocktail shaker with ice. Shake vigorously and strain over ice in a rocks glass. Garnish with a slice of fresh pear and a sage leaf for a touch of elegance.
